Sunshine Stuffed Mushrooms


Mushrooms are rich in vitamin D, the mushroom has figured how to get vitamin D from the sun even though it grows in the shade. Vitamin D helps us absorb calcium so its important to include in our diets. Shitake mushrooms contain the most vitamin D but they can be pricey. The stuffing is very substantial and you can also fill courgettes if you are trying to eliminate bread.

This recipe serves 2 people;


You will need


v 12 Mushrooms cleaned


v ¼ cup Braggs Liquid aminos


v ¼ cup olive oil


v Clean the mushrooms & marinate in Braggs Liquid aminos.


v Oil for 20 mins, tossing gently occasionally.



For stuffing


v ½ cup Pine nuts


v 4 Cherry tomatoes


v 1T/s Udos oil


v Fresh herbs (Basil, Oregano, Sage)


Instructions


v Process the nuts, herbs, tomatoes & onion powder, adding the oil last.


v Stuff each mushroom with approx. ½ t/s of the mixture.


v Place in dehydrator for 1 hr
