Low-carb Garlic Mash

Garlic Sweet Potato Mash, Creamy Cauliflower MashThis mash has been a big hit with my friends and students not only for its taste, but because it is so easy to prepare.

This is great addition to any meal – you can serve it with salads or roast vegetables. It’s a good low-carb alternative to plain old potatoes, which as I already mentioned can be a problem for those with joint pains. I like to use garlic-infused olive oil to make a nice creamy mash. You can make your own garlic oil, but most stores also stock it. A delicious mash that contains no heart-clogging butter.

What you need            

  • 1 large cauliflower
  • 2 teaspoons garlic olive oil
  • 2 spring onions
  • Pinch cayenne pepper

What you do

  • Wash the cauliflower and chop the spring onion.
  • Steam the cauliflower till tender, then place the steamed cauliflower in a processor and drizzle with oil.
  • Blend till thick and creamy. Add the chopped spring onions, cayenne pepper and celery salt to taste, and serve immediately.
